Thick & Fluffy Homemade Flapjacks
This is my go to recipe for Flapjacks. My kids absolutely love it and it freezes well when wrapped in baking paper.

This is my go to recipe for Flapjacks. My kids absolutely love it and it freezes well when wrapped in baking paper.
Ingredients
- 250 g self-raising flour
- 1½ tsp baking powder
- Pinch of salt
- 50 g sugar
- 2 large eggs, separated
- 180 ml milk
- 30 ml melted butter
- 1 tsp vanilla essence
- A little butter or oil for frying
Method
- Mix the flour, baking powder, salt and sugar together in a large bowl.
- In a separate bowl, whisk the egg yolks with the milk, melted butter and vanilla.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don't beat it smooth — a few small lumps are perfectly fine. The batter should be quite thick and should drop slowly from a spoon rather than pour like pancake batter.
- Beat the egg whites until soft and fluffy, then gently fold them into the batter. This keeps the flapjacks light without making the mixture too runny.
- Leave the batter to stand for 5–10 minutes. It will thicken slightly as it rests.
- Heat a lightly buttered pan over medium-low heat. Spoon generous amounts of batter into the pan and spread them only slightly.
- Cook until little bubbles begin appearing on top and the underside is golden. Turn carefully and cook the second side until golden and cooked through.
- Serve warm with butter, syrup, honey, jam or whatever you prefer.
